At dinner the other night, I realized that I’d effectively given Thai food a miss for ages, since what I saw as a serious decline in the food at Mai Ake Thai, and a couple of less than exciting Thai meals elsewhere around town – Infusion reminded me of just how terrific it can be.

Across the seven dishes we ordered, the flavours were a subtle, perfectly balanced and harmonious play on Thai food’s typical sweet/sour/salty/bitter/spicy characters delivered with lip-tingling freshness and zing rather than in an excocet hit – although I’m sure he could ramp up the chilli if you asked.

As good as the laksa prawns, the satay gai, a spicy crunch of soft-shell crab, wonton, Thai chicken salad and a rich, dense green curry were, the star of the night was a special of whole and boned, deep-fried snapper in a deliciously astringent tamarind sauce, the fish wonderfully crisp outside, still beautifully juicy inside.

With a bottle of Babo pinot grigio, it was a delightful, faith restoring meal.
